Food 
Gujarati cuisine is a vegetarian's delight with complete nutrition derived from leafy vegetables, prepared in innumerable variations, sweetened with sugar and subtly flavoured with spices. There is a delicate balance between various flavours - sweet, sour, bitter, salty and spicy. Some mouth-watering delicacies are: Undhyoo, Paunk, Khichdi-Kadhi, Khaman Dhokla, Doodh Pak, Shrikhand-poori, Khandvi, Handva, Bajra - Roti, Patra

Language
The local language is Gujarati. Hindi is understood by almost everyone and English is prevelant to educated people. The education ratio is improving at a much faster pace though as the city is developing as an Education Center with some great institutions. English is at least partially understood by most people in the tourist industry.

Fairs And Festivals
During any festive season, the whole city of Ahmedabad brightens up and there is lot of excitement in the air. Apart from major Indian festivals like the Holi and Diwali which are celebrated with traditional fervour and joy, there are a few festivals which are celebrated in special Gujrati style.

Makar Sankranti :
On the 14th January every year through out India Makar Sankranti is celebrated. In Gujarat and in Ahmedabad particularly the day is celebrated as Kite Festival. The sky on this day is filled with symphony of colour. Exotic Kites with different shape and size cover the sky on this day every year. This festival has today acquired international colour with people from round the globe coming here to enjoy the kite flying.

Navratri :
The festival of Navratri originated in Gujarat . It is the festival of Gujarat and is celebrated with great splendour here. The Gujaratis indulge in two interesting dances, one called Dandia - a stick dance, and another called Garba - a clapping dance There is a good deal of excitement at the time of any festival, especially through the nine days of Navratri, around Dushehra late in September. The celebrations are for nine days and conclude on the tenth day (Dushehra). The celebrations are dedicated to Goddess Durga but the method of celebrations slightly vary different.

Rath Yatra :
In the month of June / July a massive procession is taken out from the Jagannath temple in Ahmedabad. Amidst the chanting of the sacred and Vedic hymns the chariot is taken out carrying idols Krishna , Balram and Subhadra. It is very similar to Jagannath Puri's Yath Yatra.
